For dinner i slow cooked a chicken casserole in the oven..
I used:
4 chicken thighs
2 large potatoes peeled & diced
2 large carrots peeled & diced
1 large leek chopped
10-12 buttons mushrooms chopped
a serving of my homemade spaghetti sauce:

or a can of chopped herb tomatoes would be fine
along with 1 chicken stock cube in 300ml boiling water..
salt & pepper to taste
Pop in preheated oven 190 for 2 hours.
after an hour... give it a stir add a bit of cornflour of you need to thicken a little
after 2hrs
