Late night baking & a typical mummy day..

So I pretty much decide to do a bit of baking at 9pm last night! Made some yummy breakfast muffins!
Recipe dry ingredients :
1 cup Wholemeal flour
1/2 cup oats
1/4 cup nitty flaxseed 
1.5 tsp baking powder
1,5tsp bicarbonate soda
Use your own choice of different nuts & seeds I used pumpkin, sunflower, & walnuts handful of each.. 
Now for the wet ingredients:
1 mashed banana
Melt 1/4 cup coconut oil
Add 1 cup coconut milk
1 egg 
1-2 tsp vanilla 
1/3 cup honey or maple
Combine all ingredients, put into silicone moulds (made 12) and i sprinkled a few pumpkin seeds on top aswell as some ground almonds.pop in a preheated 180c oven for 15-20 mins. 

These are super tasty, curb a sweet craving & are super healthy to!
