Carrot & Coriander Soup Recipe!

I really fancied Carrot & Coriander soup after having it at a friends house the other week!
I had loads of left over carrots to use up so it was perfect timing!

First off you need to soften 1 large onion in a large saucepan with abit of Olive oil


Pop on the kettle and pull out a vegetable stock cube 


Chop up 1 large & peeled potato add that to your saucepan i also cut and peeled 4/5 large carrots


Pour over 1.2litre of stock


Add in your coriander to taste, ive added in fresh, dried works well also! yo can add extra coriander at the end if its not quite strong enough!
Pop the lid on a bring to a boil then simmer until all veggies are soft.


Once ready leave to slightly cool, then blitz up with a hand blitzer like mine or a normal food processor will do the job! 


Once lump free its done! i added pepper to taste as well as extra coriander!
 Its also freezable if you decide to make a big batch!
