Home-made Veggie spaghetti sauce

I had to do another batch of my homemade spaghetti sauce the other day so thought id blog it with easy how to pictures! saves going back to a video to load everytime to make it!
It so simple and makes around 6/7 batches..
Heres what you will need..

I usually use 6 cans of chopped tomatoes but only had 4...
you can use pretty much any vegetables you want,
I have chosen to use 2 sweet potatoes, 2 courgettes, spinach, 1 large onion and different herbs, dried & fresh..

 First thing you want to do is chop your veggies and place in a roasting tin, drizzle over some oil, i use 
Avocado oil, pop in a preheated oven at 180c for 30+ mins or until soft/cooked


I put half the veggies in my blender.. blitz then add a good handful of spinach..



pour your tomatoes into large saucepans, ive used 2 tins in each.. 


Im adding my first batch of blitz up veggies to one saucepan. and repeat that step with the remanding veggies/spinach.



Add your seasonings.. i add about 2/3tbs garlic, 1/2 tsp parsley,basil,thyme & tarragon as well as some fresh rosemary.


 Once everything is in the pan, turn up the heat till it comes to a boil.


 I measure my portions out using a cup measurement.. using 1 1/2cups per batch.


I also use these IKEA bags


Managed to make 7 batches of sauce from 4 tins! this sauce can be used for absolutely anything!
Spaghetti Bolognese
pasta sauce
lasagne
soups
stews
casseroles

Dont forget to label them with dates so you know how long you've had them.. they should last in the freezer 6 months to a year.. they never last that long in this house though!
