Mmm Banoffee Pie!

Ive had to make 2 banoffee pies in the last 1 1/2 weeks so thought i would share how i made it!
So simple!

You will need 
250g Digestive biscuits
600ml of double or whipping cream
a can of carnation caramel
100g butter
2 ripe bananas

a cheese cake tray would be best but any dish suitable would be fine.
first melt the 100g butter
Add the 250g biscuits to a blender
once the biscuits are blotz up add the melted butter until it forms a sand like texture
spread it out evenly in your tin.. make sure you pack/ press it down hard i use a flat spoon! 
pop in the fridge for about 20/30mins
pour over the caramel! 
slice your banana and start adding it on top of the caramel layer..
Add a generous TBS of icing sugar to your cream

then use a electric whisk till a firm cream with a soft peak.
Spread over your banana layer

Grate over some chocolate 
pop it in the fridge for and hour or until you need it!
Enjoy!

Baked salmon, Stir fry & Thai rice noodles

The main reason i done this recipe was because i needed to use the Dried Daikon ( white radish)
So this is totally an optional step but i have to say i really enjoyed them and will try and find them next time i make this!
So for the radish you have to soak it in water for 20mins..




First thing to do is get your salmon fillets and drizzle with dark soy sauce..

Wrap them up in tin foil, like a steam pouch and pop in a preheated oven at 180c for 20mins
Pull out a large frying pan, add a drizzle of sesame oil, once heated 
Add some mixed stir fry mix either fresh or frozen i used this blend from Costco.




Add some Thai rice noodles to a pan of boiling water these take literally 4-5 mins to cook!


Once cooked drain and add to stir fry mix

Squeeze and drain the water from the radish if using and add a few TBS of the water to the pan.

Then add the white radish
A good drizzle of dark soy sauce then its time to serve up!

The Vegan Kind Subscription Box

Ive been receiving TVK box for the last 4 months and have never blogged about it so i though it was about time to tell you more about it and whether i like it or not!

So all and all I have been so happy with my 4 boxes from the Vegan Kind!

All about Soap Nuts and why you should try them!


I have been using these incredible Ecozone soap nuts for the last 6 weeks now and i can honestly say i won't be going back!
All i use is 6/7 nuts to last around 5/6 loads of washing every time!
Thats right no liquid,powder or softener and our clothes come out clean and fresh at every wash!
I brought mine from Ocado because they were doing a special deal buy one get one free so i got two 1KG bag of nuts for £9.99 with free delivery!

 So more about the Nuts in an easier form:


Heres how i use them.. i pick out 6/7 nuts and put them in the wash bag provided.

Pop them in the washing machine with the dirty clothes.

Put the machine on a 30c i use anything from 30c- 60c and your good to go!
After the wash pull out the bag and let it dry out ready for the next load.

Simple but a tad messy fun day on Sunday!!
You will need:
Shaving foam
food gel dyes
Old toys/cars
Not only is this super fun for all ages.. but also a great learning tool, colours, counting, pattern, shapes, mixing  the colours, texture. hiding toys.

Easy healthy home-made fish fingers

So thought i'd share this simple how to on homemade fish fingers..
All children love them and big kids to of corse!
But as you know me i always like to make things from scratch not only is it better for you as you know exactly whats in them but they also taste way better!

Heres what you will need:
Cod loins (i used 2)
plain flour
golden bread crumbs
1-2 eggs



First cut your loin in half and then in to quarters ( or what ever thickness you want)

Once all cut to the size you want (mine are nice and chunky pieces of fish)


get out 3 small plates, add flour to one, a beaten egg or two to another and some bread crumbs to the last one..
You want to start by coating the fish in the flour , egg and lastly the bread crumbs.


Once all coated lay them on to a greased proof tray and pop in a preheated oven at 180c for about 15-20mins until golden.

Serve up with some homemade chips, peas and ketchup!
