Mmm Banoffee Pie!

Ive had to make 2 banoffee pies in the last 1 1/2 weeks so thought i would share how i made it!
So simple!

You will need 
250g Digestive biscuits
600ml of double or whipping cream
a can of carnation caramel
100g butter
2 ripe bananas

a cheese cake tray would be best but any dish suitable would be fine.
first melt the 100g butter
Add the 250g biscuits to a blender
once the biscuits are blotz up add the melted butter until it forms a sand like texture
spread it out evenly in your tin.. make sure you pack/ press it down hard i use a flat spoon! 
pop in the fridge for about 20/30mins
pour over the caramel! 
slice your banana and start adding it on top of the caramel layer..
Add a generous TBS of icing sugar to your cream

then use a electric whisk till a firm cream with a soft peak.
Spread over your banana layer

Grate over some chocolate 
pop it in the fridge for and hour or until you need it!
