veggie bites!


These fruit/veggie bites are packed with goodness & so super moist and yummy i made these quite a while ago so thought id share the recipe!
Be prepared there is a lot of ingredients but obviously you can sub different things for others or takes certain things out that suit you better!



First off and egg to a big bowl


Half cup caster sugar


1/4 cup desiccated coconut


1/2 cup almond flour & 1/2 cup ground flaxseed


blitz up 1/3 cup pis of mixed nuts


blitz 1 apple, 1 courgette & 1 carrot and add to the bowl


Add in 1 tsp baking powder, 1-2 tsp cinnamon & half tsp ginger


add in 1/4 cup cranberries or your choice of dried fruit


1/2 cup plain flour


Lastly add 1/2 cup almond milk or your choice of milk and 1-2 tsp vanilla essence & give it all a good mix!



pop them into cases, silicon muffin cases would be better not sure why i used these!
then into a preheated oven at 160c for 15-20mins.
