First thing you want to do boil your kettle and add your pasta to your saucepan to get it cooking.
Cut your sausages into meatball size chunks ( i used 5 pork)
Spray your sautéing pan with some light olive oil.
Cut up one white onion.
Once your pan is hot add in your sausage balls & onion on a medium heat, let them soften / brown off.
Add in a couple of crushed garlic (optional) and a tin of chopped tomatoes, refill the can half way with water and add that to the pan also.
Pop on lid and let it simmer for 10- 15 minutes.
Once your pasta is cooked drain it and set aside.
once sausages are cooked add in a handful of chopped spinach a good sprinkle of italian seasonings, plus the pasta, mix and pop the lid back on for 3-5 minutes until the spinach has wilted.
Grate some cheddar ready for topping.
This meal is great served hot or cold & tastes even better as leftovers!
